Anyone who comes to Spain for the first time will be immediately impressed by the omnipresence of ham, not only in practically all food stores and catering establishments, but also in the subconscious of the Spaniards, where it acquires an almost mythical nature. In the opinion of many, Spain has a flavor of ham, the one made with white pork. The ham is undoubtedly one of our most emblematic products, a delicatessen, which reaches its maximum degree in Iberian ham of acorn, which is ham from pigs of the Iberian breed fed with acorn in montanera.

In Spain, according to the original breed of pig, there are two types of cured hams very different: white pig and Iberian pig. The hams are salted that are elaborated with the hind legs of the pigs and the paletas with the front ones. There are different levels of quality for cured ham depending on the origin of the meat, the breed and the feeding of the pig, its breeding and slaughtering, the skill and attention of the producers and the duration of the whole elaboration process.
